Don't forget salt and pepper...

No ok..

Hind quarter of venison (chicken thighs if no venison available)
Onions
Maggi stock
Potatoesto
Mushrooms
Carrots
Broccoli and cauliflower
Dried apricots and mango
Rosemary, thyme and sage
Bottle of red wine, the good stuff ( not in your tummy----in the pot) and water to top up.
Salt and Pepper to taste

You layer the ingredients in slow to cook at the bottom to the quicker stuff at the top.
Never stir a potjie whilst cooking, NEVER. Cook slowly slowly, enough time to get a little tipsy with a few beers, cider, Rum and coke......mmmmmm Red Hart Rum ......mmmmmmm

When cooked, stir once then serve onto wild and basmatic rice.........mmmmmmm

A pic for the expats
