Mate went on a ride along a while back, prior to emigrating to the US
He was given a body armour vest & a Glock (well, not quite. He'd bought the Glock at a petrol station on his way from the airport)

Er, the clue is in the name.
It's an AR15, but in pistol format
(no stock, just the buffer tube)
Means you can have a sub-16" barrel without paying an NFA $200 tax stamp as a short rifle.
Think that's mad - look up what a Sig-brace is!!

), for some bizarre reason in the US if you remove the stock from a rifle that makes it a pistol under their legislation...

Um, ok. So you still have a buffer tube, just no shoulder pad? As Chuck says each to their own.
I'd have though an AK format would work better for such a beast. If you had an AK with a foldable stock would it flip flop from pistol to rifle status depending on how it was folded?

It already exists. The Draco AK.

It it has a sub 16" barrel, you could, but you'd be flip-flopping in a Federal prison for quite a long time!
