In general for gallery are the red dot sights like the eotech and some other vortex etc with a sort of raised window type design quicker to get on target than the narrower type like the vortex sparc 2 AR and do they offer a better overall sight picture.
I know both will work but is one type slightly easier for shooting both eyes open.

The short answer is, the bigger the 'window' the easier it is to use as you get more leeway with your mount/head position and its easier to 'find' the dot especially for laterally moving targets. There are numerous caveats to this the greatest one being what sort of parallax error the sight has, and they ALL have them, despite what the manufacturers claim.
This guy explains it quite well and amazingly for an American has a pretty good sense of humour;
However, if you're not mounting you gun in awkward/unbalanced position this is less of a consideration.
The reticle design is quite important depending on the type of shooting you do, but a lot does come down to personal preference. A red-dot that offers multiple reticles can be a good option. I prefer the Eotech type reticle with a small central dot and a larger outer ring. I have an Eotech on the shotgun I use for practical shotgun and a Holosun (503C) on my mini-rifle which has a similar reticle, although its also switchable to a plain dot.
Someone who shoots gallery rifle will probably be better suited to answering your question as i'm not 100% sure of what is required of you in that style of competition

I have tried a red dot and found I couldn't get on with it as well as I could the 1.5-5x20 WTC from Simmons. I can pick up the target quicker. I guess if I persevered with the red dot it would get better but I haven't hads time to try it much.
I would love the WTC to be 1x power at the low end.

If they could get the mag down to 1x and put an illuminated dot/chevron at the centre of the reticle (NOT an entirely illuminated crosshair), charge about £300 or less, they'd sell by the hundreds!

I know it sounds picky but not being able to go above 4x is what lets the Crossfire down for me. 4x optics are ten a penny and when you get above that the prices, and often the weight/size of the scope start to get daft. The WTC is small, slim, relatively light and best of all excellent clarity for a knock down price!
