I was under the impression that the 7.5x54 round was like the 7.5x55 using .308 FMJs ? I suppose it might be possible to get a .309 sizing die and push .311 FMJs through it, but to what end?

Assuming your mas36 has the original military barrel, the bore dimensions are;
Bore diameter : minimum = 7.50mm, maximum 7.54mm
Grooves diameter : minimum 7.80mm, maximum 7.83mm

In which case I would advise against using .309 jacketed bullets.

The bullet I use in tight 308 barrels is the Sierra 2155 155gr bullet
