The little explosion that happens after the bullet has exited the gel..??

Yes, puzzling...

i'd guess its some reaction involving the heat generated in the gel, combined with oxygen and some type of fuel... is ballistic gel flammable..?

Ballistic gel is pure gelatine of a specific and consistent consistency. Joerg Sprave (Slingshot channel on YouTube) did a great video where he visted the factory which makes it.

Perhaps they are hot gasses trailing the bullet as it leaves the barrel. They enter the gel with the bullet, get trapped, then compressed, and 'farted'.

They don't show how close the muzzle is to that gel.

There's a bit more about it here. A 7.62 fired from +/- 4 metres caused the same effect. Nasty!! :o

The last video is not gelatine but synthetic hydrocarbon gel according to the description.

We have found a dramatic effect produced by short range fire of a FMJ 7.62 mm NATO projectile from an Imbel PARA-FAL automatic rifle with its muzzle placed 4 meters (12 feet) away from a synthetic ballistic gel block (hydrocarbon gel 16,7%). After passing the projectile through the block and the development of temporary cavity, by its first retraction, there was a true secondary explosion inside the block, with formation of an intense flashlight of few milliseconds duration. This was observed and photographed in this video. We assumed the extremely hot vapors suctioned by the temporary cavity, volatilized and burned part of the gel. After this event, with the cavity shrinkage, the fumes were violently ejected through the entrance orifice. Generally, a shooting from such short distance can occur in war or combat situations, but it is more frequent seen in an urban set or as an accident (unpleasant friendly fire) with all the bad consequences of it. This observation can be useful in trauma or legal medicine. Technical data: block of 25 x 25 x 40 cm (10 x 10 x 16 inches), weighting about 23 kg (50 pounds) put on a very hard steel table (3 mm plate) deformed and diplaced by violent expansion of the gel (temporary cavity), rifle barrel with 51 cm (20 inches).
