Bit of a long time since your post, but...
If you haven't already found one, I would advise to go for a later version. First generation touches can only go as far as iOS 3.1.3. While this might not seem like an obvious limitation, apps are increasingly geared to supporting later releases. So, although you might find that it fits the bill now, you could find that later down the line you are going to miss out on some of the newer apps. Also, best value might be to go 8GB. Less popular because of space limitations for movies & music, but fine if you just have a few specific apps that you are interested in.
Of course, like most things, it depends on how cheaply you can source one
